Recipe of the Month: Vegetarian Pasta Salad
Vegetarian Pasta Salad
Ingredients
- 1 pack of gluten free /brown rice pasta.
- Trader Joe’s chicken-less strips (or something similar).
- Basil leaves.
- 1-2 tomatoes (chopped).
- 4 cloves of garlic (minced).
- 1 can of pitted black or green olives.
- 1/2 jar of pesto sauce (from Costco) or 1 full jar (from Trader Joe’s).
- 2 Tbsp of grapeseed oil.
- Sliced crimini mushrooms (optional).
Directions
- Cook pasta in boiling water. Add a pinch of salt while cooking.
- While pasta is cooking, heat grapeseed oil on a wok or skillet (3-5 minutes).
- Reduce heat to medium and mix in garlic, tomatoes, basil leaves, olives, mushrooms and pesto sauce.
- Saute all the above ingredients (2-3 minutes).
- Add chicken-less strips and saute a bit longer (2-3 minutes).
- Remove cooked pasta from boiling water.
- Add pasta to the skillet and saute 3-5 minutes.
- Add a big amount of LOVE!!
Voila! It is now ready to be served. This dish can be served hot or cold and goes perfectly with a glass (or two) of FETZER Riesling. Bon Appetit!
